Thai inspired Chicken Kebabs

Thai cuisine is always our favorite but sourcing the fresh ingredients and all that extra work just puts me off so most days I prefer take out over having to deal with this time consuming task….specially when it’s just me and the husband who enjoys all that mind blowing spicy-ness!!!!

Anyway Finch always comes to the rescue when am in a mood for something Thai but quick yet flavorful when having to feed a large foodie family

They have almost all herbs and spices in dehydrated powdered form which makes life so much easier for busy moms like us.
Check out their website to see the list of all the products : So many to choose from
Whether it be garlic, ginger, onion, greens, spices for your chai fix,etc etc

So today I opted to use all finch lemongrass powder and other herbs to make some juicy Chicken Kebabs
I opted for liquid aminos which is a healthier alternative to Soy Sauce. Thanks to finch we have not purchased soy sauce in over a few years

Lemongrass also known as “Sèra” is a ancient local herb used in many Asian dishes. When cooked it spreads a wonderful aroma into curries, gravies or even plain rice.It has many antioxidant properties that has been proven to help common issues like bloating and moods

It’s almost impossible getting the lemongrass flavour into raw meat unless it is boiled with it because you don’t want to bite into threads of lemongrass while enjoying a nice juicy kebab…

These kebabs are one of the easiest things to make, just pop all the ingredients into the food processor and get it started.Stores really well in the freezer and my kids never get sick of this because each time I serve them with either a different sauce or as a main meal in the form of meatballs and pasta

Let’s Get Started

You Will Need

  • 500g Boneless Chicken or any meat you prefer
  • 1 tbsp Liquid Aminos
  • 1 tbsp Finch Lemongrass Powder
  • 1 tbsp Finch Garlic Powder
  • 1 tbsp Finch Onion Powder
  • 1 tsp Salt
  • Lime Juice of one lime
  • 1 tbsp Cashew Powder
  • Fresh Coriander leaves(optional)

Just add all ingredients into a food processor and your kebab mixture is ready

Chill for at least an hour before using

This makes it easier to handle

Use oil if necessary and make into kebab shapes.I usually make them ahead and freeze in batches to use when needed

When ready to cook defrost them and panfry both sides

Keep tossing them to make sure all sides get cooked evenly

Serve with your favourite dip or sauce.I usually serve with Homemade Peanut Sauce which will be uploaded on the blog site soon
