Stuffed Jalapeño Poppers

Something I’ve been wanting to try for a long time but never got around getting my hands on these feisty fireballs until my sis got them fresh when she was at the local market

Do not be intimidated by these bad boys
They’re so yummy you will never get sick of eating them in twos or more I promise…

If you do not have free access to purchasing the fresh jalapeños you can definitely stuff the regular banana peppers,still absolutely delicious

They’re stuffed with a creamy chicken filling that just balances the spiciness of the jalapeños and they’re baked not fried so it’s definitely lighter and non greasy than you would expect

Was such a hit amongst the adults and not so adults since this was made before lockdown…

Let’s Get Started

You Will Need

  1. Jalapeño Peppers raw or any kind of pepper
  2. Filling
  3. Grated Cheddar Cheese for topping

Let’s prep the peppers first

Slice the pepper in half horizontally and remove seeds out using a spoon.Now that’s what makes the pepper unbearably spicy : the seeds
Make sure you’re wearing gloves when cleaning these fire balls and “ DO NOT TOUCH “ I repeat “ DO NOT TOUCH “ your face or your eyes while doing this.This will cause severe smarting which m not sure everyone can handle
I’m not scaring you but just warning you ahead

The reason for blanching them is to reduce the heat for the tongue
Do not over cook : five minutes should be sufficient to do the job

Remove from hot water and pat dry

Now let’s make the filling

For this filling I have used shredded chicken but you could definitely skip on that and just use whatever is available

  • One Cup Boiled Shredded Chicken
  • Salt
  • Pepper
  • Lime Juice of half a lime
  • Liquid Aminos(Soy Sauce Substitute)
  • 2 tbsp Cream Cheese
  • 1 tsp Dijon Mustard
  • 4 Sun dried tomatoes
  • Handful of parsley
  • Chicken Bacon bits (don’t fret it’s local and it’s halal)

Just pop everything in the food processor(except bacon bits) and blend till everything is nice and creamy

SUNDRIED TOMATOES

Keep the bacon bits to add after the creamy mixture is done.You don’t want to blend that

The filling is ready

Place on a lined baking tray

Sprinkle cheese

Bake in a preheated oven at 180” for at least 10 minutes or until the cheese is melted

Enjoy these warm and I swear they will be gone in minutes because they’re so delicious
