Savoury Scones

Savoury Scones for the win !!! They’re also commonly known as Biscuits in another part of the globe and whatever you may call it : this ones a treat !!!

I have tried these for the first time at Popeyes HK (one of the only things I enjoy eating from there)and it’s quite a popular side served for Breakfast most of the time.Unfortunately most of them were not halal so I decided to make my own version back home because the kids loved it

These savoury biscuits are ideally made with buttermilk and the texture is so rich you can’t stop with one… Served with some butter and smothered with gravy : the best of both worlds I must say !!! No regrets

As you can see in the next few images I have used this same dough over some Creamy Filling to make a comfortingly delicious Chicken Pie

Let’s Get Started

The Dough

You Will Need

  • 500g All Purpose Flour
  • 2 tsp Baking Powder
  • 150g Salted Butter
  • 1 1/2 Cups Butter Milk
  • Salt if needed
  • Dried Herbs(optional)

Step One : Mix dry ingredients together in a bowl

Step Two : Break the cold butter into the flour using your fingers

Step Three : Gradually add in buttermilk and form into a manageable dough,not too sticky not too dry

Step Four : Let this rest for atleast 30 minutes before getting ready to bake

Step Five : Gently roll this dough out on a floured surface and cut according to your preferred shape.You could either form the dough into standard scone shape or just transfer the whole thing to a lined baking tray just like what I have done today and place cuts that can be pulled apart after baking

Egg wash for a better colour on top

Step Six : Bake in a preheated oven for 20 minutes or until the top is beautiful and golden

Serve Warm with your choice of mains or you could even enjoy this plain with some butter and pepper…Yummm

CHICKEN PIE FILLING

Sauté vegetables of choice with garlic and butter

I have used broccoli,carrots,mushrooms,corn kernels,peas,beans,potatoes

Season with salt and pepper

Make a slurry with One tbsp cornflour,One cup Fresh Milk/Coconut milk,1/2 Cup Heavy Cream and 1/2 cup Stock

You could use vegeta or stock powder if you prefer.But I choose not to use them today because I had frozen stock liquid already

Add into the half cooked vegetables.

Add cooked and shredded chicken with some fresh stock

Let this come to a boil and thicken up

Check for salt and adjust accordingly
