Pumpkin Sheet Cake With Cream Cheese Frosting

Fall Vibes with this Pumpkin Cream Cheese Sheet Cake and Frosting

This was definitely a combination I’ve never attempted to make before because it’s not really that easy to access ready made pumpkin purée in cans or even pumpkin spice.
So I had to make them from scratch and it’s not that hard really….
I used fresh butternut squash also known as Batana Pumpkin in Srilanka

Let’s Get Started

You Will Need

  • Two Cups Pumpkin Purée
  • One Cup colourless oil
  • 3 Eggs
  • 1 tbsp Vanilla
  • One Cup Evaporated Milk
  • One Cup Brown Sugar or Coconut Sugar
  • 2.5 Cups Plain Flour
  • 2 tsp Baking Powder
  • 1 Tbsp Pumpkin Spice

You could use a yellow cake box mix just like what Dena used but I chose to make my own local cake box mix from scratch and you can follow the same because in Srilanka it is quite expensive to purchase items like these since they’re all imported

This cake mix can be made in larger quantities and lasts in the chiller for quite some time if stored well

Pumpkin Purée

Make The Fresh Pumpkin Puree if you don’t have canned ones.Clean and wash fresh pumpkin.Cut them into small cubes pat them dry.Bake in a preheated oven till they’r golden brown only on the edges and cooked and mushy on the inside.Let it cool down completely before transferring them to your blender or food processor.Make your own pumpkin purée at home : definitely cheaper and much healthier than those store bought ones…

Home Made Pumpkin Spice

  • One tsp Ginger Powder
  • One tbsp Cinnamon Powder
  • One tsp Mixed Spices/Cloves
  • One tsp Nutmeg Powder

Mix everything together if they’re all in powder form otherwise you could roast the whole spices and grind them in a dry grinder for home made pumpkin spice.This can be used in your coffee or anything that asks for pumpkin spice powder

Cream Cheese Frosting

  • 2 Cups Soft Cream Cheese(Room Temperature)
  • 100g Icing Sugar
  • Vanilla

Combine above ingredients to make a creamy frosting and set aside to chill while you make the cake batter

Let’s get started on the actual cake batter

Step One : Mix dry ingredients together and set aside

Step Two : Mix wet ingredients together and gradually fold in the dry ingredients to make a thick batter

Step Three : Transfer into a lined baking tin (8” by 8”)

Step Four : Design a pattern over the prepared cake batter by piping straight thick lines vertically, then using a tooth pick and drag a line horizontally.Check out the video in my Instagram page to see how I did the design.This is completely optional.You could just make swirls by dropping spoons of the cream cheese mixture over and the cake batter and make the design using a fork.Don’t stress if you don’t get it right and do what works for you

Step Five : Bake in a preheated oven for at-least 40 minutes or untill a toothpick comes out clean

You could serve immediately with a warm cup of tea or coffee but I preferred to go extra and decided to top with Cream Cheese Frosting

If you want to serve with frosting you must let the cake cool down completely before topping with frosting

This is such a warm and delicious combination.Am so glad I gave it a try!!!
