“Pizza Night” Is Fun

Pizza Night is one of the best nights of the week for the little fam….

We let the kids choose their own toppings & knowing these fussy fingers all they want on a pizza is sauce & cheese.

But this time it was a bit different as we made use of the leftover cheesy béchamel over one layer & it was such a hit!!!We are definitely doing it again….yummmm

WE DID FOUR FLAVOURS

  • Nando’s Peri Peri Chicken
  • Beef Pepperoni
  • Plain Cheese & Sauce for non spicy & vegetarians
  • Loaded Three Cheese Pizza

So You Will Need

  • Pizza Dough
  • Pizza Sauce/Homemade Pasta Sauce.
  • Cheesy Bechamel
  • Extra Cheese
  • Hot Sauce cz we don’t do ketchup but you could totally use ketchup
  • Options for Vegetarian toppings are endless

PIZZA DOUGH

For the base I made the most basic “Jamie Oliver Kinda” no yeast pizza dough :

  • 500g All purpose flour
  • 3 tsp baking powder
  • salt
  • Olive oil
  • Greek Yogurt Or Milk 1/2 cup maybe less maybe more
  • If you don’t have yogurt or milk, just use plain water

This dough does not require resting for too long.You could even use it right away.Just mix everything to form the dough.Add more flour if you find the dough too sticky.And do not pour all the liquid in at once.Always go in gradually, add more if needed.Place this dough onto a floured surface & roll out into the size of the pizza pan.This dough makes two medium sized pizza crusts.Transfer it carefully onto the lined pizza pan, drizzle olive oil & bake in a preheated oven for 10 minutes or just until the crust is partially cooked & firm.

Now you can start with the toppings & then place over the griller or place it back into the hot oven till the cheese is melted & ready for you!!!because most of the toppings are cooked & the cheese has to just melt & get stretchy & gooey…….

CHEESY BECHAMEL

This one was leftover from the previous day’s creamy broccoli pie. So easy to make: Just blend the following ingredients(except heavy cream)together & keep on low flame while stirring continuously till it thickens up.Add heavy cream after it thickens & combine well.

  • 500ml Fresh milk or coconut milk
  • 2 tbsp cornflour
  • 2 tbsp cream cheese or 4 cheese wedges
  • a tsp salt, pepper,
  • a tsp mustard paste
  • A tbsp Butter or Oil
  • 1/2 cup heavy cream(optional)
  • Dried or Fresh Herbs?

TOPPINGS

You could get creative & use any kind of toppings that suits you or your family.I used what we prefer…..

For Oven Baked Nandos Peri Peri Chicken I used the following ingredients & baked them in a preheated oven @180′ for at least 40 minutes or until the look browned on top.Each oven may have slightly different temperatures & timings.Once theyr slightly cooled slice them up for the topping.

For The Three Cheeses I used feta cheese,mozzarella & sharp cheddar.
