If you’re moor, your mom or grandma would’ve surely fed this once to you…
Well,my one certainly did, and she made every excuse to make this for us specially during that time of the month for us girls…
Each family makes it their way, this is what my sister taught me after my mom and I have altered it accordingly.
Traditionally it’s made with freshly brewed coffee and whole spices etc..
This particular one is made using espresso and Kithul jaggery as the only sweetener.
When we were travelling in the UK,we tried this as speciality coffee.At Chocoholics Srilanka,they have a similar version made using part condensed milk and part egg yolk.It is pretty sweet due to the condensed milk but tastes great if you’re a sweet coffee person!!!
Anyway, this recipe is exclusively for Egg Lovers so Non Egg Lovers look away !!
Let’s Get Started
You Will Need
- One Cup Fresh Milk
- 2 Eggs
- 1 tsp Jaggery(you could definitely do more, we just prefer less)
- Vanilla 1 tsp
- For Spices : I used : Cinnamon,Cardamom & Ginger(You could also use whole spices according to whatever is available)
- 2 tsp Instant Coffee or 2 Espresso Shots if you have an espresso machine
Keep everything ready before you start because this has to be made quickly otherwise you will not experience the best consistency.
You might end up with scrambled eggs in your coffee, and that’s definitely not a pleasant experience.So please follow every step carefully if this is your first time
- You will need a jug enough for the milk and eggs together.
- Metal Mesh Strainer
- Whisk to whisk the eggs and also the warm milk later
- Mug or Cup you will be serving your drink in
- Saucepan to boil the milk coffee mixture
Whisk eggs & vanilla till frothy and set aside
Boil the milk, coffee,spices and jaggery together in a saucepan on medium heat.Make sure the jaggery has melted and combined with the milk.
When the milk comes to a boil, carefully pour this into the beaten eggs while whisking with one hand.There is no flame on at this point.
You will notice the consistency of the coffee is thick and creamy.That’s exactly what you want !!!
Now Strain this through the mesh strainer into the serving mugs and enjoy while its warm….
Straining this coffee would definitely be different because this is thicker so using a spoon might make it easier for you.
This Creamy Deliciousness is ready to be enjoyed as it is…
Since I have a milk frother, I used the foam to top this Eggspresso
