Ka’aK El Qudhs aka Palestinian Bread

This bread is very easy to make and tastes delicious on its own when it’s just out of the oven..

Today we served with plain Greek Yogurt and a generous drizzle of Extra Virgin Olive Oil
Feta Cheese and Mixed Olives
Cherry Tomatoes
Freshly Sliced Cucumbers

Let’s Get Started

You Will Need

  • 1kg All Purpose Flour
  • 1 tbsp Sugar
  • 1 tbsp Yeast
  • 1 tsp salt
  • 3 Cups Water approximately may need little less or more
  • Olive oil as needed

Filling of choice

  1. Fried Onions
  2. Finch Dried Oregano
  3. Extra virgin olive oil
  4. Sumac

Mix all ingredients together and knead into a smooth dough

I used the dough hook in my cake maker but if you don’t have that you could definitely make the dough using your hands and that arm workout would be worth it I promise!!!

Transfer to an oiled bowl and let the dough rest for at least 1 hour in a dark place

Step Three : Once dough is risen,

punch the dough in and transfer to a clean surface

Separate into 10 large portions.Use olive oil to handle the dough

Place one dough ball on a flat surface

Use olive oil and spread out the dough using your fingers.Make sure the dough has stretched out as much as you can.Similar to the Godamba Rotti texture almost transparent

There will be small tears in between and that’s ok because you’re rolling it in anyway

Now sprinkle the fillings of choice

Roll using your fingers into a log shape

Bring it around to make a circular bagel like shape

Dip in Black and White Sesame Seeds

Place on a lined baking tray.Let it rest for 30 minutes

Spray Olive Oil on top.This step is optional because I wanted a nice crust on top as well

Bake in a preheated oven at 180’ for 30 minutes or until the top is beautiful and golden

Remove from oven when it’s done and enjoy while warm
